Island cooking features sharp, tangy flavors, the use of fresh vegetables, spices such as ginger and soy sauce, and many one-dish meals like paella and rice noodle dishes. Paella, originally from Spain, developed differently in other Spanish-speaking countries. The rice-based dish can feature any meat. Chicken works especially well; the taste is complimented by all the delicious flavors added to the recipe. Rice noodles, a staple of many island dishes, are typically presoaked when used in soups and stir fries.
